Well-known Hanoi chef Didier Corlou has released a new book dedicated to food and Vietnam.

From the press relaeas:

‘By sharing journeys in the land of flavours, I would like you to join me in an appreciation of food, an art so natural we forget it exists.’ Clearly this love is behind each of the unique projects of Didier Corlou.

‘Five Seasons’, the latest of these, the result of a collaboration between a group of journalists, is entirely dedicated to Vietnam, the chef’s second home for the last 15 years. Innovative recipes, handbooks for discovering the culinary treasures of Vietnam’s provinces, portraits of friends from the simplest cooks to the finest chefs… all these ingredients have been gathered in the books and volumes of this new collection.

The first four volumes have familiar titles: Traditional Vietnamese Recipes, Modern Vietnamese Recipes, In the Heart of Hanoi, Halong Bay and the NorthEastern Sea. Following these further volumes will cover herbs, salty and sweet dishes, and cuisine from the Mountains and the Delta. So why ‘Five Seasons’? ‘For me there are five culinary seasons. The 5th covers the periods of transition between Spring and Summer, Summer and Autumn, and so forth’, Didier Corlou explains.

The ‘Five Seasons’ collection is appearing first in English. The French version will follow soon after and the first Vietnamese adaptations will be ready for the 1000 year anniversary of Thang Long – Hanoi in 2010.
